Luscious 3 Ingredient Watermelon Popsicles

Sometimes the simplest recipes are the best, these Luscious Three Ingredient Watermelon Popsicles being a prime example. If your kids love watermelon, they’ll be all over these, and you’ll love that they take no time at all to whip together and contain no refined sugar. 

Can’t be bothered to wait until they freeze? Simply pour the blended concoction into a glass with a bit of ice and a straw and enjoy as a sort of juice-smoothie-hybrid straight away. Either way, they both just scream summer. 

 

Makes: 6-12 depending on the size of your pop molds 

Prep Time: 5 minutes, plus around 4 hours to freeze 

Ingredients: 

Approximately 2 pounds of watermelon flesh (1 quarter of a large watermelon) 

Juice of 1-2 limes 

1 tablespoon raw honey 

Method: 

  1. Place all three ingredients into a high powered blender. Add the juice of just one lime first, blend until smooth, then taste to test the tartness level. If you like a little more lime, add the juice of the second one and blend for a few seconds more. 
  2. Pour into ice pop molds and freeze until solid.
