Green Superfood Baby Puree

This puree is just packed with goodness and it tastes delish! So bright and fresh! It also happens to be in my cookbook, under the name Minty Apple, Greens and Quinoa. If you find how-to videos helpful check out the video of me making a version of this recipe  here. 

Makes: approximately 2 cups  

Prep Time: 15 minutes  

Cook Time: 15 minutes  

Ingredients:  

¼ cup uncooked quinoa 

3 peeled and diced apples 

1/2 cup spinach 

1/2 cup kale 

1/2 ripe avocado  

½ banana  

1 mint leaf  

Method:  

  1. Place the quinoa in a pot with ¾ cup water and put the diced apples on top. Bring to a boil over high heat, then turn down to low, cover, and simmer for 14 minutes. Add the spinach and kale to the pot, cover, and simmer for an additional 1 minute. 
  1. Pour the quinoa, apple, and any leftover water into a blender. Add the avocado, banana, and mint leaf. Blend to the desired consistency, adding water, breast milk, or formula to thin if needed.
